The shiny, oval seeds of the flax plant. Mainly used for oil, the whole seeds are nutritionally valuable, being rich in 3 essential fatty acids. The smooth, nutty taste is often used in breads, either add to dough or sprinkle on top. In salads, raw gives a nutritious boost to the immune system.
Also a great binder for egg-free nut-roasts and burgers. Soaking the linseed in hot water releases a jelly-like substance which helps hold food together when cooked.
