
Actually a species of sunflower native to central North America, hence some of its other names like sunroot or sunchoke ( It has been suggested that the Italian word for sunflower, girasole, somehow morphed into Jerusalem).
These knobbly little tubers have a unique flavour and great boiled, roasted, in soups and casseroles.
You might know it by its other name which refers to its effects on digestion. There are lots of suggestions on how to prevent the gas, from boiling in an acid (vinegar) to adding aspheotida to your cooking.
