Sage (Salvia officinalis) is a perennial, evergreen shrub, with woody stems, grayish leaves, and blue to purplish flowers. It is a member of the mint family and native to the Mediterranean region.
Sage has a strong flavour and its high tannin content means that it should be used cautiously (in excess it may become bitter). Commonly used in stuffings it can also be used in sauces or spicy dishes.
