The fennel plant (Foeniculum vulgare) is tall and feathery, with yellow seeds and bulbous root, eaten as a vegetable. The seed is generally used to make tea; 1 tsp/5ml per cup of boiling water, steep 3-5 mins. It was used to soothe stomach problems or asthmatic conditions and as a gargle for coughs and sore throats.
It's fun and challenging to cook with what's available and the produce is so much fresher than anywhere else. Our family loves them!
