The fillets are very fine, not bony or harsh, they are salted for 6 months in big vats of hand harvested Trapani sea salt to preserve them. They are then decanted and packed individually into jars, to which a local organic olive oil is added. The oil used is typically Sicilian –green, fruity and spicy – and an extra virgin oil from the first cold pressing.
