Rapadura is made from unrefined, unburnt, dehydrated sugar cane juice. It has a high molasses content giving it a rich flavour.
Known all over the world by various names including Kokuto in Japan, Jaggery in the Philippines, Gur in India, Panela in Colombia, Piloncillo in Mexico, Chancaca in Honduras, and Tapa de dDulce in Costa Rica as well as the trade-name Sucanet.
Many people consider Rapadura healthier than refined sugars because it contains less sucrose and retains the natural molasses and trace nutrients like iron, calcium, potassium, and B vitamins.
